Bacteria, yeasts and moulds are unicellular organisms needing only one cell (ca 1-10 micrometer in size) for life and reproduction. Nature’s greatest powers are found in the smallest organisms and the answers too many of today’s problems regarding the environment and human health could be solved by looking at microorganisms. Microorganisms are already used in a number of production areas today as in; Yoghurt, soured milk, beer, cheese, bread, functional food, bio ethanol, antibiotics, insulin, crème fraiche, ensilage, colors, food preservation, sewage treatment works, fungicides, chocolate, olives, fermented fish and meat etc.
